1 tbsp extra virgin olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
5 c canned diced tomatoes, with juice
1 c water
2/3 c heavy cream
1/4 tsp red pepper flakes
1/4 tsp dried oregano
1 tbsp sugar
salt & pepper to taste
In a large sauce pan, melt butter and evoo. Add onion and garlic, saute until translucent. Add tomatoes, water, cream, spices, sugar, and season to taste. Bring to a boil. Transfer to a blender and on low, combine until smooth and creamy. Transfer back to pot and simmer on low for 5 minutes. Combine it with a grilled cheese sandwich and top it with cheesy croutons. DELISH!
Im going to try this recipe :). Ive used another one but it takes a lot longer because it requires 5 pounds of fresh tomatoes! This seems easy enough. thank you!!!
